Jammy Hand Pies
These Jammy Hand Pies are so tasty served a bit warm from the oven with a scoop of vanilla ice cream! I have to admit we cheated and made this one a super quick-fix treat with frozen puff pastry!
- Frozen Puff Pastry - 2 Sheets
- Jam -- Our favorite for this recipe is Pear Preserves with Honey & Chai Tea, Apple Butter, or Raspberry Rhubarb
- 1 Egg Yolk - Mixed with 1 Tbsp Water for Egg Wash
- Large Crystal Sugar to sprinkle on top!
Let Puff Pastry Sheets thaw until flexible and roll out on lightly floured surface into 12"x 10" rectangle. Cut into four 6" x 5" rectangles.
Spoon approximately 2-3 Tbsp of Jam onto each rectangle, leaving 1" space around each side. Brush one half of rectangle with egg wash.
Fold over Hand Pies, ensuring jam does not ooze to sides of dough. Press sides firmly together with floured fork.
Transfer to baking tray lined with parchment paper, chill in fridge or freezer until dough is very cold and firm. Preheat oven to 375 F, cut 3-4 1" slits in top of each hand pie with a very sharp knife. Brush tops of hand pies with egg wash and sprinkle with large crystal sugar.
Bake until hand pies puff and are golden brown.
Don't worry if you have a jam blow out -- it happens!
You can always cut them in half and spoon the jam back in!
When hand pies have cooled you can serve whole or cut in half with a big scoop of vanilla ice cream!
